How do you celebrate Saint Patrick’s Day? How about a nice Lucky Leprechaun Cocktail? Honestly, here in Georgia, it would not be St. Patrick’s Day without mentioning Savannah. Back in the day the city would dye the entire Savannah River green in celebration of St. Patrick’s Day. While I think this is an EPA issue to do so now, they still dye all the water in the gazillion fountains located around the town and have a huge St. Patrick’s Day parade, so it is still worth a visit during the season.Easy Leprechaun Cocktails JENRON DESIGNSIn honor of this fun Georgia tradition I wanted to share a ultra bright green drink idea that tastes great and will have you doing a little jig of your own in no time. Let’s be honest we will all drink entirely too many green beers, and Irish Car bombs for this holiday. Traditionally we think of having just an Irish whiskey or some type or Scotch which can also be so very heavy and get your tipsy quickly. So why not lighten it up a bit with the Lucky Leprechaun cocktail?Making Lucky Leprechaun Cocktail JENRON DESIGNSThis particular drink can be made in large batches, which is perfect for large parties, or single pitchers for more intimate gatherings. It also still packs that Irish punch, but it won’t leave you feeling miserable the next day. They do tend to be a little bit on the sweeter side, since we are adding pineapple juice and Midori, but that is what the Irish Whiskey is for, it gives a nice bite at the finish.Green Leprechaun Cocktails JENRON DESIGNSDid you know? A leprechaun is a type of fairy, of sorts, in Irish folklore. They are usually depicted as little bearded men, wearing a coat and hat, that partake in making mischief. Sounds like the perfect drinking buddy to me, wink wink. 

A Lucky Leprechaun Cocktail

  • 6 cups Pineapple Juice
  • 1 cup Midori
  • 1/2 -2/3 cup Irish Whiskey depends on how strong your want them to be
  • 1 Pineapple

St. Patrick's Day Cocktail JENRON DESIGNSYou can garnish these sweet little cocktails with these easy pineapple shamrocks. They can be dyed green by soaking in food coloring overnight. Float a frozen pineapple shamrock on top of drink, to serve them perfectly chilled. Here, I used a small shamrock cookie cutter, to cut out the shamrocks out of a pineapple, soaked them for a few hours in green food coloring and then froze them so they could double as ice cubes.
